  • 1 cup whole milk
  • 1 cup yellow cornmeal

  • 12 tbsp jalapeno peppers (to taste)
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/4 cup canola oil
  • 1 can cream-style corn (14.5 oz)
  • 3 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, mix cornmeal, salt, baking soda, jalapenos, and onion. In another bowl, whisk together eggs, milk, canola oil, and cream-style corn. Combine wet and dry mixtures until blended; fold in cooked rice and cheddar cheese.
  3. Grease a cast-iron skillet with butter and dust with cornmeal. Pour the batter into the skillet evenly.
  4. Bake for 45-50 minutes until golden brown and a toothpick inserted comes out clean.
