- 2 large eggs (room temperature)
- 1 cup whole milk
- 1 cup yellow cornmeal

- 1–2 tbsp jalapeno peppers (to taste)
- 1/2 tsp baking soda
- 1 tsp salt
- 1/4 cup canola oil
- 1 can cream-style corn (14.5 oz)
- 3 cups shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In one bowl, mix cornmeal, salt, baking soda, jalapenos, and onion. In another bowl, whisk together eggs, milk, canola oil, and cream-style corn. Combine wet and dry mixtures until blended; fold in cooked rice and cheddar cheese.
- Grease a cast-iron skillet with butter and dust with cornmeal. Pour the batter into the skillet evenly.
- Bake for 45-50 minutes until golden brown and a toothpick inserted comes out clean.
