  • 8 white corn tortillas
  • 1/2 small purple cabbage, shredded
  • 1 large avocado, diced
  • 1/2 red onion, diced
  • 4 oz Cotija cheese, grated
  • Fresh cilantro, chopped
  • Lime wedges for serving
  • 1 garlic clove, pressed or minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon olive oil
  • 1/3 cup sour cream
  • 1/3 cup mayonnaise
  • 1 ½ tablespoons lime juice
  • ¾ teaspoon garlic powder
  • ¾ teaspoon Sriracha sauce

Instructions

  1. In a medium bowl, combine thawed shrimp with minced garlic, salt, pepper, cumin, and cayenne.
  2. Heat olive oil in a non-stick pan over medium-high heat. Sauté shrimp for 1-2 minutes on each side until pink and opaque.
  3. Toast tortillas over low flame or in a skillet until lightly charred.
  4. Prepare toppings: shred cabbage, dice avocado and onion, and chop cilantro.
  5. For the sauce: whisk together sour cream, mayonnaise, lime juice, garlic powder, and Sriracha in a small bowl.
  6. Assemble tacos by layering shrimp and toppings on toasted tortillas; drizzle with sauce.
