  • 2 1/2 lbs baby creamer potatoes (halved)
  • 1 1/2 lbs beef smoked sausage (sliced into 1-inch pieces)
  • 1 large yellow onion (diced)
  • 1 green bell pepper (diced)
  • 2 Tbsp olive oil
  • 2 tsp Slap Ya Mama seasoning
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 4 Tbsp butter (cubed)

Instructions

  1. Preheat your oven to 350°F and grease a 9×13 baking dish with nonstick spray.
  2. In a large bowl, mix halved potatoes with olive oil and season generously.
  3. Add sliced sausage, diced onion, and green bell pepper; toss until evenly combined.
  4. Transfer the mixture to the baking dish and dot with cubed butter.
  5. Cover tightly with aluminum foil and bake for 30 minutes.
  6. Remove foil and continue baking for an additional 15-20 minutes until potatoes are fork-tender.
