  • 3 cups all-purpose flour
  • 3/4 cup sourdough discard (or active starter)
  • 3/4 cup water
  • 6 tablespoons melted butter (divided)
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon
  • 3 tablespoons honey (or maple syrup)
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • Cream cheese frosting (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a small bowl, mix together 3 tablespoons of melted butter, brown sugar, and cinnamon to create the filling.
  3. In a large mixing bowl, combine flour, baking soda, baking powder, and salt.
  4. Add water, sourdough discard, remaining melted butter, and honey to the dry ingredients. Mix until a dough forms and knead for about five minutes.
  5. Roll out the dough on a floured surface into a rectangle. Spread the cinnamon filling evenly over it.
  6. Roll the dough tightly from one long side to form a log; seal the ends.
  7. Slice into twelve equal pieces and place in a greased baking dish or cast iron skillet.
  8. Bake for 25–35 minutes until golden brown on top.
  9. Cool slightly before serving; drizzle with cream cheese frosting if desired.
