Ingredients
- ¼ cup non-dairy or regular dairy milk (warmed to 110℉)
- 1 ½ teaspoons instant yeast
- 2 teaspoons granulated sugar
- 2 cups + 1 Tablespoon all-purpose flour
- 200 grams sourdough discard (unfed, at room temperature)
- 1 egg (lightly beaten)
- Fresh parsley or rosemary (chopped)
- Kosher salt
- Garlic powder
- Unsalted butter
Instructions
- In a stand mixer bowl, combine warmed milk, instant yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, and garlic powder. Mix on low speed while adding melted butter until a shaggy dough forms.
- Knead the dough on a floured surface for about 3-4 minutes until smooth.
- Place in a greased bowl and cover; let rise for 60–90 minutes until doubled.
- Prepare topping by mixing softened butter with herbs and garlic powder; set aside some for brushing.
- Divide the risen dough into twelve pieces and flatten each into circles; spread with the butter mixture before folding and placing in a greased loaf pan.
- Allow to rise again for 30–45 minutes; preheat oven to 350℉.
- Bake for about 30 minutes; cover with foil if browning too quickly. Brush with reserved butter mixture when warm.
