  • 1 lb lean ground beef
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 cans diced tomatoes
  • 1 can tomato sauce
  • 2 cups beef broth
  • Cooked long-grain white rice

Instructions

  1. In a Dutch oven over medium heat, brown the ground beef until no longer pink. Drain excess grease and season with salt and pepper.
  2. Add olive oil, onions, and bell peppers; sauté for about 5 minutes. Stir in minced garlic and cook for another 30 seconds.
  3. Return beef to pot with diced tomatoes (and juices), tomato sauce, and beef broth. Mix in Worcestershire sauce and Italian seasoning.
  4. Bring to a boil then reduce heat to medium-low; let simmer for 15-20 minutes.
  5. If serving immediately, stir in cooked rice and parsley; simmer for an additional minute.
  6. Serve hot with optional cheese on top.
