Ingredients

  • 2 pounds chicken breast
  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add pineapple chunks on top of the chicken.
  3. In a bowl, whisk together soy sauce, brown sugar, apple cider vinegar, minced garlic, grated ginger, and red pepper flakes until well combined.
  4. Pour the sauce mixture over the chicken and pineapple in the crockpot.
  5. Cover and cook on low for 4 to 6 hours until the chicken is cooked through and tender.
  6. Shred the chicken using two forks and mix back into the sauce.
  7. For thicker sauce, combine cornstarch with water in a bowl, then stir this mixture into the crockpot. Cook on high for an additional 10 to 15 minutes.
  8. Serve over rice or with your favorite sides.
