  • 4 boneless, skinless chicken breasts or thighs
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • ½ cup coconut milk
  • 1 tablespoon sriracha (adjust to taste)
  • Fresh cilantro and chopped peanuts for garnish

Instructions

  1. Heat vegetable oil in a skillet over medium-high heat. Season the chicken with salt and pepper, then cook until golden brown on both sides (6-7 minutes each) and fully cooked. Remove from skillet.
  2. In the same skillet, sauté minced garlic and ginger until fragrant (about 1 minute). Add peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil. Stir and cook until smooth (3-4 minutes).
  3. Return the chicken to the skillet and toss in the sauce to coat evenly. Simmer for an additional 2-3 minutes.
