Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together melted coconut oil, eggs, granulated sugar, and vanilla extract.
  3. In another bowl, combine flour, cinnamon, baking soda, cream of tartar (if using), and salt.
  4. Fold the dry ingredients into the wet mixture along with the grated zucchini until just combined; avoid overmixing.
  5. Pour the batter into loaf pans and sprinkle topping ingredients over each.
  6. Bake for about 50 minutes or until a toothpick inserted comes out clean. Cool before slicing.
