  • 2 (5 oz) cans of tuna, drained
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil, divided
  • 1/3 cup shredded mozzarella cheese
  • Bread slices
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium mixing bowl, combine the drained tuna, chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, mozzarella cheese, salt, and pepper. Mix until well combined.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Butter one side of a slice of bread and place it in the skillet.
  3. Scoop about two tablespoons of the tuna salad onto the unbuttered side of the bread. Butter another slice of bread on one side and place it on top of the tuna salad with the buttered side facing up.
  4. Grill until golden brown on one side; flip and repeat until both sides are toasted and the cheese is melted.
