  • 3 sticks unsalted butter
  • 3 cups sugar
  • 5 large eggs
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 5 tablespoons unsweetened cocoa powder
  • 5 tablespoons hot water
  • 4 oz semi-sweet or dark chocolate
  • 3 oz heavy cream

Instructions

  1. Preheat oven to 325°F (163°C) and grease/flour a tube pan.
  2. In a small bowl, combine cocoa powder with hot water; set aside.
  3. Whisk together flour and baking powder in another bowl; set aside.
  4. In a stand mixer, cream softened butter until fluffy. Gradually add sugar and mix well.
  5. Incorporate eggs one at a time, mixing thoroughly after each addition.
  6. Alternate adding the flour mixture and milk (starting and ending with flour). Mix until just combined.
  7. Divide batter into two bowls; mix cocoa-water blend into one bowl.
  8. Pour batters alternately into the prepared tube pan.
  9. Bake for about 70 minutes or until a toothpick inserted comes out clean.
  10. Cool in the pan for 15 minutes before transferring to wire rack.
