  • 1 cup salted butter (room temperature)
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 6 tablespoons salted butter (for caramel)
  • ½ cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup heavy whipping cream (divided)
  • 1 ¼ cups milk or dark chocolate (for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Beat together room temperature butter and powdered sugar until fluffy. Gradually mix in flour until combined.
  3. Press mixture into a greased 9×13 inch baking pan and bake for about 20 minutes until golden.
  4. In a saucepan, melt remaining butter, corn syrup, and granulated sugar over medium heat. Stir in half the heavy cream and boil for about 5 minutes until thickened.
  5. Pour caramel over baked shortbread and let cool completely.
  6. Melt chocolate with remaining cream until smooth. Pour over cooled caramel and spread evenly.
  7. Refrigerate for at least one hour before cutting into squares.
