Ingredients

  • 115g dairy-free butter
  • 400ml dairy-free milk
  • 50g caster sugar
  • 1 pack active dry yeast (approx. 7g)
  • 500g plain flour
  • Zest from 2 lemons
  • 80g lemon juice
  • 125g coconut cream
  • 125g caster sugar
  • 3 tbsp cornflour
  • Renshaw Lemon Icing

Instructions

  1. Warm dairy-free milk until lukewarm and mix with yeast; let sit for 5 minutes.
  2. Add melted butter, sugar, and lemon zest to the yeast mixture. Gradually stir in flour to form dough; knead until smooth.
  3. Place dough in an oiled bowl, cover, and let rise for 30 minutes or until doubled in size.
  4. Prepare lemon curd by whisking lemon juice, coconut cream, sugar, cornflour in a saucepan over medium heat until thickened; cool.
  5. Roll out risen dough into a rectangle, spread cooled lemon curd evenly, then roll tightly into a log and cut into equal pieces.
  6. Preheat oven to 180°C (350°F), let rolls rise for another 15 minutes, then bake for 20–25 minutes until golden brown.
  7. Drizzle with lemon icing once slightly cooled.
